This setting in the Organisation Settings only allows the customer to set up the product, it does not allow them to Edit products after this. The setting is not available from within the Customer Settings, so it will open up the option for all of your customers to use this function. It's good to note though, if you allow customers to set up products, they will also be setting up fields such as Storage Charge Methods, Pick efficiencies, base unit of measures etc. This would mean you will want to have a review process set up within your operations, to ensure that any settings that can impact your work flows are checked.
